Lemon extract is derived from Citrus limon through extraction of the fruit's peel and juice aromatic compounds — primarily D-limonene, citral, and a range of aldehydes and esters that together create the bright, sharp, unmistakably lemon flavour profile. Lemon is one of the most widely used and extensively studied natural flavouring sources in the world, valued for its clean, fresh character and its ability to enhance the perceived freshness of a drink without adding sweetness.
